Lima beans offer a superb variation with a smooth, buttery taste. Baby lima or butter beans are a light-colored variety known as carolina or sieva beans. Regular lima beans are a much larger variety and more yellow. Baby limas make an excellent side dish and are great as a creamy base for soup. Use in stew, for dips, spreads, mashed, and in salads. Combined with sweet corn, they make the famous dish succotash.
